Good Evening everyone!

Is it possible to automatically background download/install the security updates without updating the OS?

I ask as my company is moving ahead with new security procedures which requires the security patches but I can’t let the OS update due to the strict needs of our Video Editing software.

You can't update the OS without updating the OS. That's what you're asking. Which video editing package are you using that you think won't work with these updates? What version of macOS are you using now?

Ah okay. Avid Media Composer.. it can play particularly terrible with new OS updates

If you're using 10.11.6 or 10.12.6, you should be fine with the security updates for those operating systems. We're using Media Composer here with the latest security update for 10.12.6 and not seeing any problems. If you're using 10.13.x, you're going to always have a problem with Avid's slow certification schedule.
 
It’s an awkward situation chrfr, we have to update the systems every 2x weeks... Every app, all the security updates. I currently can’t see a way in which this Won’t cause issues..

You still haven't answered what OS you're using. Apple doesn't update the operating system every 2 weeks.
 
Currently 10.12.5 but this update will have to mean everything is constantly updated.
