I noticed this especially on white colors where it turns very visibly blue when tilting at the screen which makes no sense to me since oled is suppose to looks accurate from any angle. I certainly don’t have this issue on my oled TV. It’s his a hardware defect to be replaced or normal on phones?
 
I noticed this also and for me it seems to be the True Tone implementation, they might have changed something or maybe it’s a bug. But can you try to go to another area with different lighting and then toggle True Tone on and off? In brighter lighting when I toggle True Tone on and off it is yellower like on my 12 Pro Max but when I go back to my couch area where it is dimmer I notice the screen is more blueish.
 
Off axis colour shift is normal with oled, I've also noticed that off axis colour shift on my 13 pro max is a lot more aggressive compared to my iPhone 12 Pro Max.
