My iPad got stuck when updating to 4.2.1, right at the end.
The whole process went smooth until the iPad was rebooting at the end (after the box in iTunes that disappears after 10 seconds). Then the progress bar on the iPad just stuck at about 95%. The problem is that described here http://discussions.apple.com/thread.jspa?threadID=2656599&start=0&tstart=15
I got past this as follows:
1. Disconnect the ipad from iTunes (unplug the cable)
2. Reconnect to the PC (seems only to be a windows problem)
3. Use Tiny Umbrella to kick the device into recovery mode
4. iTunes will start and tell you it needs to do a restore.
5. Agree and wait a while. The restore should go through fine, and you will end up on 4.2.1 finally
6. Resync everything from iTunes from your last backup. This can take a long time and will sit there "estimating time remaining" for quite a while. Be patient. Get a beer or watch some TV in the meantime
