I wont comment on ethicality, but yes...it will work. You may be asked to provide a physical ID card as well from the university/college.

If you are talking about Apple Store and their educational discount, no an email address won't work. You need to have a physical valid school ID.

In addition, you don't get discounts on iPhone, iPad or iPods. Only Macs and some accessories.

If you are talking about cell service you would need to contact the provider to ask what information they need in order to apply that type of discount.

I took a break this semester and am returning in the fall, so if it didn't work now, even if I buy the phone now, could I always add a discount in the future?
