How do I save them to use?

Click download button underneath preview of the wallpaper. Once opened in new tab hold your finger on the pic till you get option to save it. It'll go in to your photos app.

I just realised you can set photos from as wallpapers directly from camera roll. I don't think this used to be possible pre iOS 5.1? Used to have to go through settings every time to change wallpaper

That depends upon the license of the photographer. Keep in mind that copyright applies to photos, just as it does to music or articles. Just because a photographer posts his photos for you to view on 500px or some other site does not mean that they're freely available for your use.

FWIW, I do share mine for non-commercial use, too. 500px.com/wbeem.
 
When I select "new iPad" it changes the resolution and crops the image, making it less widescreen. What is the best resolution that doesn't crop the original image?

Edit: nvm I figured it out. The iPad uses the image in whatever way you've zoomed it in. I never realized before :)
