I was wondering, does anyone else’s watch tap you twice but there is no actual notification present? I feel like this mainly happens when I’m covering my watch with something, say having hands inside my pockets. It’s also not the hourly chime feature either as I have that disabled.

what else could it be? I work for tech and haven’t been able to figure this out. May be a glitch.
 
The only times I can think of that has happened to me is during a run when I hit mile markers. Can’t say I’ve felt it at other times.
 
Do you have "Cover to Mute" enabled? When you mentioned the bit about it happening when you're covering your watch that made me think it was Cover to Mute. When I cover mine to mute it gives me a short buzz and a longer one that sort of fades out. I hope that made sense.

A good way to check is go to your Notification Centre, tap on a notification, then cover the display with your hand for a few seconds. If you feel the same taps / buzzes then there's the cause.

You can go to the Sounds and Haptics section of the Watch app and disable Cover to Mute there. :)

I occasionally get a subtle tap but when I look at the watch there is nothing to see. My guess is that the Watch started to interpret a voice command or some other input then decided it was a false positive and went silent.

I get it.

For me - because I wear my watch with the digital crown towards my wrist - if I put my hands in pockets etc - sometimes the clothing, or even bending my wrist will press the digital crown for half a second and activate Siri - which will give you a little double-tap.

You can verify this by wearing earbuds synced to the watch - and when you get the double-tap you should also get a really quick tone in your ears.

So, if yours is the same double-tap as mine then could be that!

Yes I do have cover to mute enabled. It may just be that! But it buzzes me even when not receiving calls.

Cover to Mute turns off sounds and just uses the Taptic Engine for any notifications you get. Try disabling the setting and see if the problem persists.
 
Every once in awhile my Series 5 would do what sounded like 'brrrriiing!' and double-tap but nothing on the screen or a notification dot. I finally silenced it by putting it on permenant DND mode and let my iPhone make all the notification sounds since it's with me anyway and louder.
