I have successfully installed Windows 7 Ultimate on my Macbook Pro with two SSDs installed, one in the main drive bay and one in the optical bay, using an external DVD drive. My system is a MBP Late 2008, 2.66GHz C2D, 8GB RAM, 256GB Samsung 850 EVO in the main bay and 256GB 840 Pro in the Optibay. I have OS X 10.9.5 on my Optibay SSD, and Win7 on the SSD in the main drive bay.
OS X is encrypted with FileVault2, and Win7 with BitLocker, so neither OS can see the other, so no sharing data. Also to boot in Windows I have to hold down the Option key at startup (I also have a firmware password) and select the Windows drive.
My MBP does not have a TPM chip, so Win7 BitLocker requires a USB flash drive with the startup key inserted at Windows boot. The USB drive can be removed after Windows has started. I keep the flash drive on my keychain. I found Windows would only "see" the USB flash drive at startup if it was using a GPT partition scheme, and formatted NTFS. I had to partition it in OS X, then format it in Windows. I know from experience that Win8/8.1 BitLocker w/o TPM can use a typed-in password instead of a USB flash drive. I'm quite pleased with this setup and amazed to get such good functionality out of a 6 year old machine.
