So I managed to get everything off my old POS macbook and onto my brand spanking new high end 15 inch model without a hiccup. The problem is, i'm now worried I brought over a lot of crap that I didn't need before and I don't need now. And i'm worried lots of clutter in the system files that will end up slowing this laptop down more and more.

Short of starting over and transferring individual files, could someone give me some advice as to what I can do to clean out the internal cobwebs that have been brought over to this new beast of a laptop?

Backup everything on an external hard drive or USB, start completely fresh, and just restore stuff as you need it. There's no other way, just suck it up :p
