I use a Samsung 980 Pro (2tb) in a TB3 case as my Mac Mini M1 boot disk. I was able to update the default firmware to ver 3B2QGXA7 with Samsung Magician Software when the SSD was installed in my PC. After the update I had no problems booting from the SSD when put back into the TB3 case.

Is there any performance change? I think the speed seems more consistent at ~2600MB/s R/W.

Anyway, the update went well without any issues on the Mac or PC side.

could you not use a normal Samsung 980 2TB and reserve the Pro for your PC?
is the external solution you posted here a stable one? How are boot times when compared to the internal SSD? how is overall experience when compared to internal solution? any drawbacks?
