I currently have the original 160 GB HDD in my machine. I want to upgrade to at least a 500 GB but wouldn't mind having a 1TB if I can find one at the right price. However, I think 500 GB would be enough for the near future. Prefer 7200 RPM.

Any suggestions for a good quality hard drive (with links if possible).

The Hitachi will work fine, I actually have one in my 2.66 i7, it's actually much quieter than the 320 GB HG Scorpio in my old 2.16 C2D.

Basically, any 2.5-inch SATA hard drive will work for your MPB (though, it probably shouldn't be any thicker than 9.5mm).
