sum cells from separate sheets

I have a Numbers file that contains two separate sheets. Is there a function that I can use to take data from a cell on sheet #2 and combine it with data from a cell on sheet #1?

Yes, but you have to add the sheet reference to the cell reference.

Is that what you're looking for? You can do it inside Numbers as well. Just type = then click on the cell in the sheet you want, then type + and click on the other cell on the other sheet. It will automatically create the references for you.
