My wife & are on an AT&T family plan. If I were to get her an iPhone, could we potentially swap SIM cards at some point so that the iPhone would then work with my number? Id rather do this without a hack, but only having 1 data plan.

You could, but just upgrade and have at&t swap the numbers. Otherwise you will have to activate it in iTunes to get your SIM to work in the iPhone.
