Ordered a black iPhone 14 pro and regret I didn’t get the silver. Is it possible to go to an Apple Store on launch day to exchange or is it a lost cause unless I want to wait a few weeks?

It doesn't hurt to try. You just need to get up early in the morning and line up and hope for the best that they have the one you want in stock. If your SB is a pick up, you'll need to cancel it but I'd just wait till you can secure the silver one first before you cancel.
Either way you can take that phone that is being delivered to you back to apple store unopened and return it. You'll just have to get in line and get a new silver.
