iPhone 12 Pro Max Switching ATT X to E-Sim on 12 Pro Max?

Hi,

I am upgrading ATT iPhone X to 12 PRO MAX.

Can I switch to e-sim when I purchase it from Apple store? I would like to be able to use local sim card when I travel in the future and it
would be great to use sim card slot while keeping my USA line open.

Should I get sim free or ATT 12 Pro Max?

I have never got sim free and just wondering what the advantage is since apple website states if I pay in full the phone is
unlocked at point of purchase.
