I'm sure I'm not the first to look into this...currently I have 10 years' of runs on Garmin and 7 years of steps on Fitbit. While I don't particularly love either of those platforms, I don't want to lose all that data. If I were to abandon those devices and use an Apple Watch, is there a way to either 1. continue using Garmin and Fitbit apps, adding new data to the old, or 2. transfer all my old data into a new place, adding the new to that new place?

I have Apple everything else and I'm fairly tech-savvy.

Rungap. That's what I use, and I too have several years of data in both Garmin Connect, and in Suunto Movescount. I wanted to "even it up" so to speak, and I used RunGap to sync the data. Now, I use the Apple Watch, and simply gather the activity from the Apple Health app, then export it to Strava, Garmin Connect, and Movescount. Works like a charm. The only "drawback" is that Rungap hits you for like $2 every quarter for the "advanced" version that allows the export/import function.

If you use iSmoothRun to record the run, it can export directly to both Garmin and Fitbit. If you want to use the native workout app, then yes, RunGap (as stated).

But I really like iSmoothRun and endorse it over the native app and Nike+, which are the others I’ve tried. It has an iPhone app and a watch app, it allows for 2 customizable data screens on the watch with up to four data fields per screen, you can create custom interval workouts, and it can export to just about anywhere, which was your original question. It’s not perfect, but it’s as close to a Garmin experience on the AW as exists right now.

It’s $4.99 or $5.99 (gets you both the iPhone and watch apps) and well worth it.

I don’t know of a way to export your existing data from those sites because I’ve never tried to do it.

When you run Rungap for the first time, it will "import" all of your activities from whichever account you ask, it takes a long time, depending on how many activities, I had over 1000, but when you "synchronize", you can do so from a particular date. Then, once the accounts are in Rungap, you can once again, "sync" to whatever you want. But the important part is that you can export your new activites with no problem.

Another option is an app named "HealthFit" that will export to Dropbox, or mail a .FIT file, or it will export directly to Strava and a few more of the less popular (for me) apps, Ride with GPS, Sport Tracks, Training Peaks, and Under Armour Connected Fitness to name a few.
 
Also thinking about switching - I run 3 times a week with gps (2,5hrs together), indoor cycling (5 hrs/week) no notifications. But the battery... I charge my Polar m430 once a fortnight... AW S3 would be once every two days. Hard choice...
