Just a quick question really:

My Apple Watch is currently being used with my iPhone 6 however, I am expecting my iPhone 7 to arrive this week. What is the correct process to switch to the 7?

Do I just back up my 6 to iCloud, and then restore from the back up, when on the iPhone 7? Will this also restore the data between my Apple Watch and my iPhone 6 (i.e. watch faces, health stuff, aps, etc) or is it better to go through the 'Unpair Apple Watch' process (via the Apple Watch app on my iPhone 6) and then just pair it to my iPhone 7?

Unpair watch - backup phone (iCloud backup or encrypted to iTunes) - restore backup to new phone - restore watch from new phone.

What if I only want the Watch data restored?
AFAIK you are out of luck. Apple do not appear to support that scenario. You will need to set up your phone as new and then pair and set up your watch as new.
