Hi! I'm buying a new macbook pro M3 to replace my 4,1-->5,1. Inside the 5,1 I have an Highpoint SSD7101A full of nvme disks, so I want to ask you what is the better solution:
1- buy a PCIe TB3 (or TB4?) enclosure and put inside the Highpoint
2- buy a 4 disks enclosure TB3 (or TB4?) and sell the Highpoint (what will be the speed?)
3- connect the macbook to the mac pro via ethernet and use it (too expensive for electricity? And max 1000 mb/s, it's true?)
4- other ideas?

Be aware file sharing is not the same as accessing a local drive. There are permissions issues etc, all sorts of small things that don't work the way they did when the files were accessed locally.

Your Mac Pro is going to burn upto ~200w at idle.

Get the thunderbolt enclosure. Since you're not needing an eGPU capable one, you don't need an expensive high-end option.
