All Devices Switching To New Apple ID

I wasn't really sure where to post this, but I have some people I know who are married and sharing an Apple ID. I've been trying to talk them into switching to using Apple Family Sharing for years, but now something has come up and they need to create a new Apple ID.

My primary question is, will signing out of an Apple ID on her phone delete all her health data, or will it stay there, allowing her to simple sign into a new Apple ID, and it'll then upload to iCloud using her new account?

Unsure as to the ramifications of this.
