How can I nightly sync my camera roll to my computer via wifi? Like how the phone syncs with iTunes, can I sync my camera roll also?

Not sure about from phone to pc. I sync my camera roll to DropBox, however with free "CameraSync" app from iTunes app store. The pic's are almost available immediately on my PC via DropBox.

It's not free  and I wouldn't mind buying it if it it uploaded them without me having to open the app. I know it says it can upload them in the background but still I'd rather not have to even open it :p

Why not just use photo stream?
It wouldn't sync videos, I believe, but it will sync your pictures via wifi.

Not being able to delete individual photos sucks. This will be available in iOS 5.1 I think and as much as I would like that feature, it's not worth giving up a jailbroken iPhone for. Unless they find a way to jb 5.1
