Is this possible? I selected one and it synced, however when I clicked on another it removed the prior and replaced it with the new one.

As a work around I was able to create a smart playlist that combines the separate playlists, but this is annoying.
 
I have 2 synced playlists with no problems.

In the Watch app on your iPhone check the Music settings for Playlist Limit. There you can increase the limit to allow more storage. I think that's how it works.
 
Unfortunately at this time, you can only sync one playlist. The same is true with the photos app. Perhaps this will change in the future.
