I just got my iPhone and am in the process of inputting all of my contacts from my old phone into Address Book to put them onto my new phone. If after I do so and I manually update a contact on my phone like add an email or whatever, what happens next time I sync it to my computer? Which will take priority, the comp or my iPhone?

It goes both ways (not that there's anything wrong with that), updating both your phone and computer with the most recent changes. Whatever is newest prevails, but it's on a contact-by-contact basis.
