i just got the 4S and i want to give my daughter my old iphone3g as an itouch. how do i sync both these things on my one itunes, so that her apps/music/etc. and my apps/music/etc. stay separate? i'm afraid to experiment in case i wind up erasing my phone, so appreciate any suggestions.
 
There is no problem doing that. With each device, you can select separate sync settings (e.g. different music, apps, etc.).

First restore the backup of your 3GS to your 4S, then sync the 4S. That will set up the 4S sync to match what you're accustomed to. Then restore the 3GS as a new device, and let her set it up however she wishes.
