I synced my Touch. Many mp3's ended up in the 'unknown artist' folder.
I went to that folder on my HD and fixed most things - creating new folders and putting the right song in the right artist folder. (for a wasted hour and a half) I re-synced the TOUCH.
The songs were right back in the wrong folders. grrrrrrrr
Why does this happen?
 
You need to fix the ID3 tags within the files. Moving them to different folders makes absolutely no difference at all.

OK - I'm new to this. I am familiar with the tags - but I don't know how to change them. I notice there's an info file with each song in Itunes but that doesn't seem editable. So.... how do i change the tags.

1st lesson: don't change the files at all. Don't even look at the files. Do everything in iTunes!

So once you find the songs in iTunes select them and hit command-I to inspect and change the properties. If you are using Windows instead of Mac OSX then the key combo will be different: look on the menus.
