I have a new iPhone 4 and sync'd it for the first time last night to my iMac. Other than refresh ical, what exactly is occurring when the sync takes place? Are there files stored on the iMac?
 
It will backup all your apps and settings. So if you erase the firmware for any reason (jailbreak or other) you can get everything back to way it was.

I think it also makes an encrypted backup of your files (like photos) too.
 
A lot will also depend on the options you have selected on iTunes. The sync can be a two way thing, getting items from the iPhone to the mac/iTunes and vice versa.

It will back your phone up (pretty much everything) so should you have to restore it or replace it, your phone will be a carbon copy of the data at that point in time.
