Say I go into System Pref.>Energy Saver Prefs.....

I'll customize I want optimal battery life when my Mac is running under only the battery...but it doesn't save it.

As of right now my the Energy System Pref. doesn't have any settings at all. It's just...on.
 
Those load power profiles (or, if you have a Unibody MacBook Pro, they switch GPUs). They aren't actually saved settings. Each tab shows (part of) your power configuration for each power source. The "Higher Performance" or "Better Battery Life" stuff are just presets.

If you want to dig into the gory details of OS X's power management, or just learn how to configure all the settings it hides from you (like Wake On AC Change, or whether the "Sleep" button hibernates the machine, or just puts it to sleep), open the Terminal, type in "man pmset" (no quotes), and hit enter.
