Systemwide Finder Changes

Does anyone know how to do the following across ALL Finder windows?

1) Change the header bar thing from the old to the new skin? I know you should just click "Sort by ....." to change it in an individual window, but I would like to make it standard across all Finder windows.

2) Change all Finder windows to the Cover Flow view?
