Am on AT&T but seems thought to get a 6S Plus with store reservation, manage to pick one up for t-mobile, is their a huge difference between the models? Can the t-mobile version be used on AT&T? Would I miss anything, thinking of returning the t-mobile version as still sealed.

T-mobile one is missing band 30. Band 30 isn't widely deployed yet, but when it is, it will be nice to have (will be used to relieve congestion in densely populated areas). Otherwise the phones will perform the same
Basically it will have the same network performance as the iPhone 6/+. Which means it should be fine in most cases. band 30, like terraphantm said, is meant to fill-in where it's congested, so in dense areas you might get slower data speeds. But even then someone with a Band 30 phone won't see the benefits for a long while.
