I am planning to be out of the country with my iPad, but not my computer, for 4+ months. I am concerned that should I have any problems with my iPad and need to restore, I'm not going to be able to do it on another computer without losing everything. Any ideas as to what I should do if this happens.

Copy your backup file to a hard drive or flash drive along with your media content.
 
Define 'losing everything'

Say the worst-case happens and you have to a do a full restore before you've 'backed up' the iPad contents to the computer you're using for the restoration. You can download all your apps again free of cost. So you'd be losing your personal settings, documents and contacts... and maybe music/media files.

Putting mission-critical files in dropbox is a great suggestion. If this is a huge concern, just sync the iPad to whatever iTunes-capable computer you have access to abroad as an insurance.
