I'm finding the new Ipad boring at the moment. Last year I had the wow factor of Garage Band, the camera as the Ipad 1 never had one, Real Racing 2 and so on.

Big Win Hockey. I'm a huge hockey fan (there is a soccer version too), so this game is pretty cool. Instead of playing hockey, you manage a team. Its cool and frustrating at the same time, because my team sucks, lol. But its all in good fun.
GTA3 is another one. The game was awful on the iPad1 because it just couldn't handle the game. It still blows my mind that a game I grew up playing on a console (PS2) is now on my phone and iPad.
Can Knockdown 2 is full retina. Zombie Gunship, Red Bull World Tour, Hard Lines is kinda like the old Tron game from back in the day. Draw Something is also Retina I think. I know Words With Friends is.
Zinio for magazines if you don't want to use Newstand. Flipboard for quickly checking web blogs like TUAW and Engadget.

I Like Pandora Radio app most. You can add songs to your iPad from your iTunes library, but if you have a Pandora Radio account, you can also stream tunes to your iPad for free.

iPhoto is amazing on the iPad but you said you find that boring so I guess otehr photo editing apps are a miss.
Wonders of the Universe is amazing.
