Istat menus is the way to go. You can continuously view system temps and stats without going through dashboard.

I prefer smcFanControl, it actually monitors the CPU temps and cooler speed, also offers the user the option to manually control the fanspeed thus, having a cooler system.

Though, there's no reason why you shouldn't use one of the above in combination with this utility.
