How hard would this be to do? He would like to try my watch out and see what it's like. How hard would it be to pair it back with my phone and retain my settings?

Just unpair from your iphone app and start pairing with his. All your settings will be saved when you are ready to pair back to your phone. I'll try to find a screenshot for you, sec.

Set up and pick a wrist.
On your iPhone, tap Set Up as New. If you’ve set up once before, you can tap Restore from Backup on your iPhone and follow onscreen steps to get to the Wrist Preference screen. Pick a wrist by tapping Left or Right on your iPhone. Then read terms and conditions and tap Agree to continue.
 
You'll have to manually re-enter/validate your Apple Pay cards when you pair again with your phone.
