Is it possible to delete my photos and music on my 5s to make space for iOS 8 and then put the photos and music back on the phone after it's updated? How would I do this, with a recovery from an iTunes backup made right before updating? Is it possible to recovery after updating the OS?

You actually don't need that much space to update to iOS 8 if you do it using iTunes. I know that OTA requires 5+ GB free, but this method doesn't require that much. Open iTunes, select your phone, and hit update.
