For example, if I let someone use my laptop, I don't want sms or iMessage messages showing up on the screen. Is there a quick toggle/keyboard shortcut rather than having to open iMessage and disable...? Thanks.
 
Never let anyone use your account. Either create an account for them or let them use the Guest account.

Its a family member staying with me. Just don't want them to see messages coming in as I get them. It could be just for being used 5 minutes here and there...
 
Make another user or use the guest user. Or enable DND to disable all the notifications.
 
There's no app to download that works as a quick toggle in the menu bar, etc.?
 
why is the most direct and simple way of doing it not good in yr case?

Messages/Preferences/iMessage/ and un-click Enable this account.

if you think yr family member can simply enable back on the account then the problem is you can't trust that person, or, its clear that that family member is closer to other family members than s/he is to you. or something like that.
it sounds complicated. if so, you can't loan him/her yr computer as a computer or iPhone a very personal device.

There is nothing you can do that they can't undo if they are using your account. The "correct" way to loan your computer to someone is to either create an account for them and delete it when they're gone, or let them log into the Guest account.

I saw a post a while back of someone letting thier child use the computer for a few minutes and somehow deleted all the pictures in photos.

the guest account is the best way to let someone use your computer and it's already there. It's easy to use and is very fast if you enable the "fast switching" (login Items) - you can quickly switch users without even logging out of your regular admin account.
