I don't own an Apple Watch but I'm curious to know is there a watch face or complication that shows your email and text message count on permanently on the watch face?

There is no watch face or complication that can show email or text messages. The only complication that can show in great detail is calendar. The Apple Watch does have the messages app and email app to see your texts/emails.
 
AW is used slightly different than iPhone, if use properly. iPhone normally is used as batch process for notification, unless you wear your iPhone on your hand all the time, and look at it all the time, you are not able to never missed any notification, or always get it right on time.

You could setup AW to get all notifications you want to notified in AW be right on time, and never missed them, since it is a wearable device always physical in touch with your body, and you could wear it all time, maybe other than sleeping and heavy impact sports.

A wearable device is best to use as real time notification device. When someone email, text, call, IM you, or any app notify you, through AW, you know right away through vibration, and sound if you like, since it is physical touch your body all the time when you wear. You could still choose to ignore it, but likely other than on the move you will check on notifications right away.

Properly select which notification will passed to AW, and which will stay in iPhone wait for batch process will ensure only more urgent one go to AW, and non-urgent notification could set in a way only show up in iPhone.
