I have seen many many posts and threads on this subject and wondered if anyone has ever got to the bottom of how to resolve this issue i.e. text encoding with Mac Mail? I am using Lion and what originally peaked my interests was the mail I was receiving from various e-tailers. The pound sterling sign always appears as the dreaded black diamond with the question mark inserted. I know this has more to do with the e-tailers formatting of messages than my settings. However, I did start to poke around in my Mac Mail settings and noticed the encoding is set to auto rather than UTF-8. Now it could have been that auto was UTF-8 but a quick check of the email info (sent messages to myself) show the charset to be us-ascii not UTF-8. I can select UTF-8 for each message but it then reverts to auto again. I have tried going into terminal and enter the following - defaults write com.apple.mail NSPreferredMailCharset "UTF-8" however this has no effect.
Anyone solved this issue? My mail client is Gmail and I did also go into setting online and alter those to use UTF-8.
Apart from contacting the e-tailers I don't suppose there's anything I can do about the black diamonds instead of the pound signs?
