Today I discovered that all text messages with a certain contact were gone.
I've read about the lowered limit in iOS 5, but a quick search on Google suggests that the limit is 75,000.
I'm only at about 18,000 messages currently so that shouldn't be an issue.
And reaching the limit should only prevent you from receiving more messages, not delete current ones.

So I plugged my iPhone into my computer and opened PhoneView and suddenly I can see all messages all the way back to 2008.
How do I go about displaying them on the phone again?
The [Load Older Messages] button that normally resides at the top of a conversation is not present for this contact.

iPhone 4S 64GB. iOS 5.0.1. iTunes 10.5.2. Not jailbroken.
 
Have you tried restoring again from backup? Maybe something happened during the first time. I still have all my previous texts that's going back up to 2008 and it shows the entire thread. So, I don't think it affects all iPhones.
 
Step 1.Open up the message were it has gone missing
Step 2. Whilst viewing the message Do a hard reboot on your iPhone.
Step 3. When the iPhone resets it will load the entire message/thread.
Step. Go back to view the message.
