What settings or process do i need to follow to be able to delete text messages from my devices (iphone and ipad) but KEEP them on my Mac?
 
Not sure if you need to do anything special. When I delete text messages from my iPhone, they still remain on my Mac, which I find somewhat annoying (especially in the case of spam messages). However, this behavior might depend on various preference settings. Maybe try a few tests and see what happens?
