How do you turn off text messaging on the iPhone 5 so it does not show up on the iPad?

On ipad : Settings - Messages - Imessage off

Can you control it from the phone and not the iPad?

You can turn of iMessage on the iPhone too. But if you do that then the messages will be sent as SMS rather than iMessage.

Disassociate the iPad with that email account.
