I've been trying to find out how to write text (i.e. write with the Apple Pencil, then automatically have this converted to text which can be copied/changed fonts etc.) on my 5th gen. iPad Mini (iPadOS16.7.2)/1st gen. Apple Pencil.
Apparently there's a feature called Scribbles, but I could never get it to work. According to this forum posting you need to have at least one keyboard set to "English":
(NOTE: I suppose a more precise answer is to have the iPad set up with one of the keyboards for a language which Scribbles supports).
So now Scribbles works and I can take notes directly (I found a nice guide on how to do that here). Unfortunately I realized that it won't recognize my language (Norwegian) as it clearly tries to recognize all my handwritten words into English words, so obviously there's some dictionary involved here. Also it won't recognize all non-English characters such as Æ, Ø, Å, æ, ø and å.
I was hoping Scribbles just recognized the shape of the letters, then converted them into text and disregarding any spell-checking or whatever, but apparently not.
So..... for non-English writing (which language isn't officially supported by Scribbles yet) -is there a way I can use my Apple Pencil to write in Norwegian and have it converted into text? Perhaps using some other apps even?

I add “English” to Keyboards.
Settings - Keyboards - Add New Keyboard - English

Clearly you weren’t set-up for a language supported by Scribble. Now with a supported language loaded, all is well, and the issue is resolved.
