I’m driving with my wife. She is driving.

I get an iMessage and type a response. Then I put my phone in my lap or on it’s left side and it activates the voice messaging. I can’t stop it. It beeps and records.

Any ideas as to why and how to turn it off?
 
Well, I don't know how to turn that function off (or how to turn it on in the first place), so if home screen handles that, it's something that you could do.
Maybe there's some setting in Accessibility?

Yeah I can’t find it. I don’t know what to even call it
 
hmm... if you touch the Audio Messages icon on the Messages screen (bottom of that messages screen, icon looks like a waveform) Maybe you are touching that inadvertently when you move your iPhone to one side) Again, returning to home screen would certainly then avoid accidentally triggering that app.
