Quick history lesson: on launch, the LG UltraFine 5k did not support USB-C input, only TB3. A revision was released 2 years later which allowed USB-C input in addition to the TB3 input, using the iPad as the primary use case for this addition.

I just got my M1 iPad and verified that it does work with the original display (albeit still not very exciting given the limits of external displays on an iPad) and it can access HDs connected to its USB-C ports.

This behavior matches the Apple Support docs update.

Can confirm that it works the other way too - the updated Ultrafine 5K supports the M1 iPad over thunderbolt. As you say, not exciting until iPadOS supports extended rather than mirrored desktops on external monitors.
