Look at the official photo attached below, the black is really black, it's almost impossible to tell the black background of the display and the black bezel.

I think part of this comes from the dramatically improved contrast ratio.
1300:1 for iPhone 6 Plus, 1400:1 for iPhone 6, versus 800:1 for iPhone 5s

Anyway, the new display does look very promising.

Yeah, maybe marketing.
But I think the reason they chose black wallpapers is because it looks that good.

This.
Basically every product image that contains a display uses either a) simulated images on the display or b) a render.
 
Without a doubt the new displays have a noticeable difference in person with black levels, for the most part image quality will be the same with even better viewing angles, the 6 plus screen will be a stunner
