I'm loving the new iPad Pros from a hardware perspective although understand the limitations of iOS.
Having said that, I've been genuinely impressed by two apps that really let me do creative work that I would only have done on the Mac previously.
Those are Affinity Photo for photo editing and Lumafusion for video editing.
While Affinity Photo is still very new, it is an incredibly powerful image editor and the developers are hard at work resolving bugs and introducing new functionality.
Lumafusion has been around for a wee while now but maturing nicely and offers a whole lot more functionality for the video editor than what iMovie on iOS provides. I was always disappointed by how limited iMovie is but so impressed that I can accomplish all my editing requirements with Lumafusion on the iPad.
Now I'm just looking for an iPad app that can offer the automated time warping functionality of Ableton Live for audio mixing and I'll be able to dump the Mac for 90% of my usage.
