I saw the 5-7 day shipping on the Apple site as well. Fortunately, I ordered a 15" HI RES glossy on Tuesday and mine just entered the "prepared for shipment" stage earlier this morning. I was able to get one of the Apple customer service reps to upgrade my shipping to expedited for free, so it is possible that my laptop will be here on Monday.
