This seems way too high and I'm not sure what is causing it. I have about 10 apps on it and I attempted to remove to see if it affected the "Other" size but it didn't at all. I read that the "Other" category is for album art and applications you download, but how can I tell how much space each application is taking up?
 
It sounds more like some (well, a lot) of the files becoming corrupt, which is usually the cause of a rather large "other" section on your iPod touch...I horribly doubt it's anything to do with apps and album art; I have album art on every single one of my 1300 tracks and have 56 apps installed on my iPod, and my "other" isn't even at 250MB...

This happened to me on my mini. It went unoticed until it took up almost all 4 gigs! Just do a full restore. It worked for me.

Unless someone knows another way?
 
The 'Other' is just temp files. If you actually need the space it will be reduced to make room for more music or whatever else you put on the device.
