I'm given to understand that the 16 gb option doesn't give you much punch over the 8. I do Photoshop, some fairly straightforward video editing (FCP 7 and moving toward FCPX)
Anyone had experience with this question?

A search of the forums would likely have brought you the answer you seek.

The bottom line is, if you're not running out of RAM in the first place, more will not give you any performance benefit whatsoever.

Do a search regarding page outs and what they mean, then monitor yours, you'll be able to know if you need more, and you'll learn something in the process.
 
It wont give you more "power", just more multitasking capabilities or VMs.

I would still get 16GB if you're a medium to heavy Photoshop user editing any decent size RAWs or PSDs.
