It's there on the CD, pop it in
One of the icons on the CD (you may have to scroll down) is "Optional Installs"
Open it
Click next a few times until it gives the list of things to install.
Click the arrow next to Applications and select X11
Proceed with rest of install

Yep, that threw me too, i've learned there's a lot of applications that put option in that location. kind of hard to spot sometimes.
