In the iOS 14 beta you were able to watch YouTube videos and 1440P, it seems to be removed in the final update.

They removed the capability to watch YouTube in 1440p

I only see options to go up to 720 P but I think that is also limited by carrier. I’m on Wi-Fi so I don’t know
