Almost nothing for me. Ventura is the same, and I think it even gained a bit more, with Continuity Camera (major feature btw), and duplicate photo detection in Photos.app.
The Network Locations feature might be omitted temporarily while Apple fixes bugs, and Preview unable to open .ps or .eps files might be because of the licensing costs to support those files, and hardly anyone uses those file formats anymore; they're an ancient format from the 80s and 90s. Probably not worth the cost of maintenance, especially considering security concerns. Other applications on the market will be able to open/view those files.
System Settings doesn't feel dumbed down, either—it feels cluttered, though, and I expect Apple to start simplifying settings in the next year or two. Whether or not that means it'd feel more dumbed down, or if we'd lose access to settings, remains to be seen.
One area that is dumbed down and annoying is the photo picker in Contacts.app. When assigning a photo to a contact, you used to be able to zoom very close up in one's face; now, it's limited like iOS and can only zoom in so far. It's also cluttered with Memojis to select from. Looks to be a direct port from the iOS Contacts.app. I liked the older style picker from Monterey and earlier.
