Had the original watch in SS, ended up selling it.

I'm going to get another one now, the S3. I'm not sure yet on which one, it will either be the aluminum black, or the SS(non black). Seems like Apple is moving more toward the SB models??

Anyway my thinking is to get the LTE version as it has 16GB of memory, of which 8 can be used for music. I probably won't even activate it thru Verizon. Is my thinking correct, and any issue with not activating it?

You don't have to activate LTE function if you don't want to. It will ask you when you are setting up the Apple Watch initially, but you can bypass that. You can use the Apple Watch as you normally would, but Verizon does offer a 90 day free trial if you are interested.
